Tasty Thursday

Lunch was a quick and easy fix today. We had Spring Vegetable Ramen Pleasure. It took minutes to put together and I loved it...the grandkids...well vegetables are questionable for Halie, Brevin asked for seconds. We had garden salad on the side. After Brevin had Chocolate Mint Pudding and Halie asked for Strawberry Ice Cream. Here is the recipe for our Spring Vegetable Ramen Pleasure:

You will need: 2 3 oz packages ramen noodles (any flavor)
1 cup julienned carrots
12 ounces fresh asparagus, trimmed and cut
into 1 inch pieces (about 2 cups)
1 tablespoon cooking oil
Teriyaki sauce

Cook noodles according to package directions (discard seasoning packets). Drain and keep warm.

In a large skillet, cook carrot and asparagus in hot oil over medium-high heat for 3 to 5 minutes or until asparagus is crisp-tender. I actually precooked the asparagus in boiling water for 5 minutes then tossed it into the skillet. Stir in the cooked noodles. Add teriyaki sauce; toss to coat. Makes 4 servings

sounds good to me. i have tons of ramen in storage lol
my kids would feel deprived without it!
