Green Chili Stuffed Chicken

Green Chili-Stuffed Chicken Breasts - Crockpot Style


Ingredients:

4 boneless skinless chicken breasts -- pounded thin
3 ounces cream cheese

1 tomatillo
1 can (4 oz size) chopped green chilies

1/2 teaspoon chili powder
1 can cream of mushroom soup
1/2 cup green enchilada sauce

Directions:

In a bowl, combine the cream cheese, tomatillo, green chilies, and chili powder.

Place a generous dollop on each flattened chicken breast, then roll up.

Place chicken in Crockpot, seam side down. I used toothpicks to hold the breasts together.

Top chicken breast rolls with remaining cheese mixture, soup and enchilada sauce.

Cover and cook on low for 6-7 hours

This recipe is everywhere on the internet and you can change up the ingredients as I have done to fit your tastes. I added a tomatillo because I have them growing in my garden and wanted to try them in a recipe.

Everyone loved, really loved, this dinner. We served it with homemade enchiladas that Ali brought home from a co-worker. They were authentic enchiladas and I so hope that David’s wife will share the recipe with us soon. Yummy! Thank you so much David.

We ended the dinner with another attempt at rice pudding…… never give up until you find the perfect recipe……..Our Motto……and we think this is the one!

Rice Pudding



3 cups cooked rice

1/2 cup raisins

1 teaspoon cinnamon

1/2 teaspoon nutmeg

French Vanilla Pudding – made from scratch!

Cooking Rice…..you know how to do that but just in case DH wants to give this a try I’m putting the instructions here for him……REALLY?

3 cups water

1 1/2 cups long grain rice

1/2 teaspoon butter

Pour water into sauce pan. Stir in rice, butter, and raisins. Bring to a boil, then turn down heat to low and let cook until rice can be fluffed with a fork, about 17-20 minutes.

**French Vanilla Pudding

2/3 cup sugar

1/4 teaspoon salt

2 tablespoons flour

2 tablespoons cornstarch

1 2/3 cups evaporated milk…1 can

1 1/3 cups milk

1 egg yolk

1 teaspoon vanilla

Combine dry ingredients in large saucepan. Gradually stir in milks. Over medium heat, bring to boil, stirring constantly. Let boil one minute. Beat egg yolk in small bowl and stir in a small amount of hot mixture. Pour into pan and bring to a boil. Remove from heat and stir in vanilla, cinnamon, nutmeg, cooked raisins and rice mixture.

Loving Fall

We took time yesterday to enjoy the beautiful Fall day.  We did our best and tried to get a few pictures of Ryan!  He does "not" like to have his picture taken for any reason, not for treats, not for prizes, the answer is NO.  

So with a little luck and very few promises we got this pumpkin patch shot.  He hated that his hands got dirty. 

I definitely have Fall fever.  So today I will do some decorating inside and out.  Best of all we will have a nice fall dinner from the Crockpot! 

Tomorrow I will bring you the pictures of dinner and the recipe.

Harvest Moon Farmer's Market

What a beautiful fall morning! We had decided last night that we would venture out to the Farmer's Market on Saturday morning. Being the informed community citizens that we are..... (it's a joke!)..........we head to 25th street.........NO AVAILABLE PARKING ANYWHERE!

After some driving around we found our place and made our way towards the throngs of people. I'm thinking wow.....this is unbelievable...why are so many people into the farmer's market today. Well, it's the grand finally and in celebration of the Harvest Moon there were numerous activities. It was absolutely so much fun to see all the different handmade crafts and food, finding fresh vegetables, herbs, fresh made cookies and bread, as well as all the restaurants selling small samples of their house specialities. We didn't buy any of the vegetables we wanted because there was to much ahead of us to see, and it's not like we had a shopping cart to push around! By the time we walked back through the THRONGS the choice eggplant, tomatoes, and zucchini were GONE!

Lyn and Ali give sidewalk chalk a try. Lyn wanted the guy to give her some gloves to wear.....he told her...."It really does just wash off!" This was so creative I can't wait for my grandkids to give it a try. Everyone gets their own circle to design, Lyn drew an eye and Ali wrote "Live, Laugh, Love" with flowers, smiley face, and a heart. I just took pictures!




Lyn always wants me to get in the picture......so here it is! I actually like how this one looks of the two of us! Ali you are such a doll!

Lunch is always on the agenda! But before we ate this tasty Cubana Torta, we had walked up to the Bookshelf because Ali likes to have her Tarot Cards read. Michelle Sutton is our favorite card reader. She likes to use the cards as a guide to help you make you own decisions about your questions. After the reading we walked from Washington down to Wall to get the sandwich you see above from Taqueria El Paraiso! Yummy Yummy Yummy

Raptors Say Good-Bye

It’s been a week and we are missing Brian!   What a great season we had.  Even though we lost in the first round of the playoffs Brian brought so much fun, excitement, and love into our home we just didn’t want the season to come to an end.  Along with being an awesome guest in our home, Brian was named the MVP of the Pioneer League and the Ogden Raptors.  We knew that was a possibility from day one!   Brian wasn’t sure he was even going to play much the first day he came to Ogden.  He said there were a lot of great players on the team…..ya think! 

We have tons of memories from this season and we’ve added yet another great family to our list of “keep in touch” file!
