Peanut Butter Pancakes

peanut butter pancakes

1 cup flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup creamy peanut butter
2 tablespoons sugar
2 tablespoons vegetable oil
1 large egg
1 cup milk
2 tablespoons milk
Directions:
In large bowl mix together flour, baking powder and salt. Set aside.
In small bowl, whisk together peanut butter, sugar and oil until smooth. Beat in egg, then milk.
Pour the milk mixture into the flour mixture, stirring just until blended.
Lightly coat griddle or skillet with oil and heat it over medium-high heat.
Drop batter onto the griddle and cook until tiny bubbles appear on the surface of the pancake, then flip and cook a few minutes more.

Summer's Last Hurrah

Yep, I smell Fall in the air.  And this morning it kinda smells like tomato soup.  tomato soup

Slow-Roasted Tomato Soup

1 -  28-ounce can of whole, peeled tomatoes

salt and pepper, to taste

1 tablespoon brown sugar

drizzle of olive oil, about 2 teaspoons worth

4 Tablespoons butter

1 onion chopped

1  cup reserved tomato juice

1/2 cup cream sherry

1 cup heavy cream

Preheat oven to 300 Degrees. Line a baking sheet with heavy duty foil; set aside.

Drain tomatoes, saving the juices for preparing the soup (you should about 1 1/2 cups reserved). Slice the tomatoes in half and place cut-side up on the prepared baking sheet. Sprinkle with salt, pepper and brown sugar. Drizzle with olive oil and roast in the preheated oven for one hour. Remove tray from oven and let cool 10 minutes.  Sauté onion in butter.

Transfer cooled tomatoes and onion to a blender.  Add the tomato juice, sherry, and blend until smooth. Pour soup into a 2-quart pot and heat until warmed, but not boiling. Stir in the cream and cook for one more minute.

Puffins’

Today we whipped up some Mini Pancakes cooked all at the same time WAHOO!   They were amazingly wonderful and the kids gobbled them up quickly.  These are actually even easier than pancakes!  No standing over a griddle flipping forever!

Mini Maple Syrup Chocolate Chip Pancake Muffins

1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2/3 cup buttermilk
1 egg
2 tablespoons pure maple syrup
2 tablespoons melted butter
1/2 cup milk chocolate chips

Preheat oven to 350 degrees.

Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Sift together with a wire whisk.

In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined.

Add wet ingredients to dry ingredients and stir with a spoon until combined.

Stir in chocolate chips. Reserve a few chips to sprinkle on the tops.

Bake for 8-9 minutes. Actually took about 12 minutes, just watch them to turn lightly browned.

Makes 24 mini pancake muffins.

Let cool slightly and remove from the pan. Serve immediately with warmed butter if you like or even just with maple syrup.

Cobbler Heaven

Summer is leaving us with the fragrant beauty of peaches …..simply intoxicating when they are in season! From peach cobbler to fresh slices over vanilla ice cream, they are the stuff childhood summer desserts were made of. As if you needed any excuse to fall deeper in love with the juicy fruit, just feast your senses on this delicious………….Easy Peach Cobbler DSC_0190

1/2 cup butter
1 cup sugar
1 cup milk
1 cup self rising flour
2 cups peaches
Directions:
Melt butter into the dish you plan to cook inches.

In a separate bowl, mix sugar, milk, and flour.

Pour this mixture into your butter. DO NOT MIX!

Sprinkle your 2 cups of peaches over the top of your mixture. Still not mixing the ingredients.

Bake at 350 degrees for 1 hour.

Our Morning Walk

This little guy?gal was splashing away in the gutter of a home that was watering….yes his/her partner was there as well spreading wings but she/he flew away before we could snap the picture…

Then as we turned the corner we hear overhead this flock of geese ………Canada_geese

They have been flying over for several days now, but we aren’t usually out of bed when we hear the honking sound.   DSC_0045

Today’s walk ……Worth every minute that we spend discovering nature and…..Legend has it that the tallest dandelion a child can find will be equivalent to the number of inches that child will grow in the coming year!

Fudge Puddles

Cookie Crust recipe:
1/2 c. butter, softened
1/2 c. creamy peanut butter
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1/2 t. vanilla extract
1-1/4 c. all-purpose flour
3/4 t. baking soda
1/2 t. salt

In a large mixer bowl, combine butter, peanut butter, and both sugars. Beat in egg and vanilla Next, in a separate bowl, mix the flour, baking soda, and salt. Gradually add flour mix. to the creamy mixture. Chill in the fridge for at least one hour (or if you're impatient, chill the dough in the freezer for about 15 minutes). Remove from fridge and form into 1" balls. I use a small melon baller scoop to make mine a uniform size. Grease a mini-muffin pan and add 1 ball to each muffin cup: Bake in a 325 degree oven for about 15 minutes or until very lightly browned. Remove from oven and make an indentation in the center of each ball. Let them cool in the pan for at least 5 minutes and then move to a cooling rack.

It's time to make the fudge filling. Immediately start filling the cookie cups with the filling. It will start to harden just a bit as you do it, so make sure to give it a good stir once in awhile.

Fudgy Filling recipe:
1 c. semi-sweet chocolate chips
1 c. milk chocolate chips                             1-14 oz. can sweetened condensed milk
1 t. vanilla extract

Melt all this in a double boiler and then fill your cookie pockets.DSC_0536
