About Me

My photo
I would say that I am curious, vivacious, gregarious, sometimes funny, intelligent, easy going, very passionate about the things I love, caring, thoughtful, and kind. Maybe that is a little over the top, but I think you can count on me to be very honest. LOL

The Little Man that I live with told Grandma yesterday, “Grandma, I am not going to pre-school because you have to do math all day!”  So they came home and jumped in the leaves!  The days of youth are so valuable!   10459487976_3228df67f7_c

I’m so lucky to be able to share them with my little guy, even with working full time and trying to finish up my degree it is all worth it…. so I can provide a sweet life! ……. “All for him!”

Sweet J’s Smokehouse Chili

Okay,, so we aren’t having a Halloween Bash this year and I’m sad sad sad!   I miss the fun of everyone getting together.  We have all gone in so many directions that it just doesn’t happen like it used to!  So today while I was feeling down in the dumps….I decided I needed to make a pot of chili, and bring back a few pictures from the very first time we got together for Halloween!   My chili isn’t nearly as delicious as J’s but I gave it a shot!   I put his recipe at the end of this post so that I don’t have to search high and low for it next time I’m brave enough to ask him to make it again!   He can’t say, “I don’t have the recipe any more!”clip_image002 clip_image004

Halloween Bash

1 bunch celery

1 large yellow onion

1 head of garlic

2 TB olive oil

1 large can of baked beans

2 large cans of chili beans in sauce

1 small can of white beans

1 large can stewed tomatoes

1 large can tomato paste

1 pork shoulder

1 lb beef stew meat

1 bunch cilantro

1 TB chili seasoning

2 green bell peppers

1 red bell pepper

1 pablano pepper

Tabasco Chipotle sauce to taste

Preheat olive oil in large stock pan. Add celery, onion and garlic and cook until onion in translucent – 8-10 minutes.

Add green, red and pablano pepper and cook an additional 5 minutes. Add baked beans, chili beans, tomatoes and tomato paste.

To prepare meat:

Smoke stew meat for 1 hour and add to chili mix.

Smoke pork shoulder for 8-10 hours until the meat falls off the bone. Shred pork and add to chili mixture.

Let chili mix simmer on very low heat for 4 hours. An hour before serving, add cilantro and chipotle sauce.

Perfect Way to Spend Sunday Morning

P1110306

Co-sleeping is the best way to get sleep, except that you might possibly roll over and suffocate your baby, so never, ever do it. That was the expert advice given 3 years and 4 months ago because, if you do choose to co-sleep you will need to bed-share until college.  Wahoo that’s what we do!

De Ja Vu

P1110305

Sure enough this happened again!  The hand soap dispenser has now been moved to a position just out of “The Dude’s” reach!

There is something incredibly healing about letting go of the need to control everything—including a clean bathroom! It is healing to watch his little hands learn to turn on the bathroom water faucet, pump the liquid dispenser, and smile as he lathers it all over his little self and all over everything within reach!

Wouldn’t it be great if we could all live this carefree and happy!

Kendry Hates…..FLIES

This is not a new fear by any

means…but this year flies

have certainly been a problem

for us!   Since today was actually ‘Face Your Fears” day…we had a talk about this annoying insect!

Kendry has developed a dreadful fear – the common house fly. Now, I admit that I don’t particularly like flies. I actually hate it when they land on my food, I even hate it when them come close to my food.  I’ve been told they poop every time the land, so my obsession with them touching my food is very rational!  However, I don’t freak out or anything like the little man does!  Below is a picture of him growling and chasing a fly away from our yard…his words “Get out of our yard!”

P1110277

KC can have a complete meltdown. All of his muscles tense, he swats at them, he yells at them, sometime he even starts shaking…it is a phobia!  He covers his face and screams! Go away fly! I remember very well the day a fly woke him from his afternoon nap…not a pleasant experience!

P1110286

Now of course….he is not drinking his drink because the fly got on it….NEVER!

P1110276

Even the dead ones are a problem!  Fortunately, we have a really good housekeeper who comes twice a month and cleans, cleans, cleans, so there are no “Mosca domestica” as Juana would say!

I’m sure the day will come when he is over this phobia. When I talked with Dr. Drescher  he said “Come on Ali, I wish I could give you some clinical diagnosis, or even better advice, but there’s nothing we can do for him when he gets upset over flies…you just have to wait for him to outgrow it!”

P1110283

It’s not necessarily normal for him to have this intense fear, but it’s not unusual, either. Kids his age can have these phobias – of bugs, spiders, and other creepy crawly things. But the fear will pass, in time, and likely shift to something else. Hopefully it will be something less prevalent than house flies next time.  Besides look how happy he was just hours later when he discovered that there were grapes growing in the backyard!  Yummy
