Spring Break ~ Family Day

When Five Guys says “Burgers and Fries,” they mean burgers and fries. I was a little surprised when I walked in and looked at the menu….Burgers and fries make up the entire menu, except for hot dogs and a grilled cheese or veggie sandwich.  The burgers actually taste like meat—what a burger you’d make from scratch at home might taste like.

According to Five Guys, they use only fresh 80/20 ground beef that’s never frozen and serve it on fresh baked buns. Five Guys also serves up terrific tasting fries made from skin-on Russet taters, cooked in peanut oil….today’s potatoes were from Sugar City, Idaho…and when they say large order, that is exactly what you get.

Speaking of peanuts, there are free peanuts to nibble on while you wait for your burger. Located in The Commons at South Towne.

After a fun lunch we were off to Jordan Commons to see the movie “Hop”….Kendry’s first attempt at the movies!   He did so awesome, watched for almost an hour and then took his afternoon nap.

Hop is a tale about sons being unable to live up to the ideals of their fathers, being told what is expected, being seen as soft and unable to exert any say in what they really want to do in life.

The movie begins on Easter Island (Where else would the Easter Bunny live??and I immediately thought what a great lesson to teach my GD as soon as we get home!).  The reigning Easter Bunny decides that its time for his son to start learning the ropes as its almost time for him to take over the job, but EB, like all teenagers, has plans of his own, and none of them include being his dad’s successor.  Nevertheless, he accompanies his dad to work.  Dad runs a massive Easter Candy  factory, which is located under one of the giant stone heads on the island.

  It is here that we are introduced to Carlos, an over-sized chick, who is pretty unhappy as the 2ic(you know second in command) to the Easter Bunny and runs the candy production side of the operation.

Wow, what a wondrous factory it is…. hundreds of bunnies and chicks running around manufacturing the most delectable treats and packing them into baskets to be delivered to the children of the world, by the Easter Bunny!  Carlos fancies himself as the next Easter Bunny, but really…I mean come on… have you ever seen an Easter Bunny Chicken???  Exactly!  The thought is absurd, and never once crossed Daddy Easter Bunny’s mind, which infuriates the chicken and inevitably,  results in an attempted hostile takeover!

On the eve of his succession to the coveted Easter Bunny position, EB runs away from home, and heads to Hollywood, determined to pursue his career as a drummer.

But, when he lands in Hollywood, he soon finds out, like most hopeful musicians (you only have to watch Idols!),  that becoming a star is easier said than done. “Hoff” gives him a standing O as a rising star.

Dejected, hungry and lonesome, he runs into (literally) Fred (a real live person, played by James Marsden), who is in an equally dejected state, after being lovingly kicked out of his parents home and being told to pull himself together, get a job, and make a life for himself.

The adventures of Fred and EB are fun…fun… and more fun, and the ending is just too heart-warming for words! I’m thinking this will be an Easter tradition ….just like “The Christmas Story”!  We’ll be adding this to our DVD collection.

Condensed Milk ~ Is There Anything Better ~ Chessmen Banana Dessert

 
  I'm a huge fan of condensed milk, like Bean and Bacon Soup, I can eat it right from the can.  So this banana dessert caught my eye as quick as a flash!  Off to the store to gather the ingredients that weren’t in my pantry.

Chessmen Banana Dessert

  • 2 bags Pepperidge Farm Chessmen Cookies
  • 6 bananas sliced
  • 1 5 oz box vanilla pudding
  • 3 cups half and half… I know the box calls for milk…butt…
  • 1 8 oz package cream cheese, softened
  • 1 14 oz can sweetened condensed milk
  • 1 12 oz container whipped topping

Line bottom of 9 x 13 dish with one bag of cookies. Lay bananas on top, cut them up however you like them.  I slice mine! 

In a bowl combine half n’ half and pudding and blend with an electric mixer.

In another bowl combine cream cheese and sweetened condensed milk until very smooth. Fold the whipped topping into the cream cheese mixture.  Add the cream cheese mixture to the pudding and stir until well blended.

Pour the mixture over the bananas and cover with the second bag of cookies.  Refrigerate until ready to serve.

Stuffed Crusted Pizza

Sauce:

3 garlic cloves, minced

3 tablespoons olive or vegetable oil

1 can tomato sauce

1 large can crushed tomatoes

2 tablespoons brown sugar

1 tablespoon Italian seasoning

1 teaspoon dried basil

1/2 teaspoon salt

1/2 teaspoon crushed red pepper flakes

 

 

 

Directions:


In a large saucepan, sauté garlic in oil until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until sauce reaches desired thickness.

Pizza Dough:

2 packages active dry yeast

1 cup warm water

3 cups all-purpose flour (approximate)

2 teaspoons olive oil

1 teaspoon sea salt

1 teaspoon honey

Dissolve yeast in warm water in large bowl (also warmed).  Stir in half of the flour, oil, salt and honey.  Stir in enough of the remaining flour to make dough easy to handle.

Turn dough onto lightly floured surface.  Knead about 10 minutes or until smooth and elastic.  Place in greased bowl; turning to coat all sides.  Cover and let rise in warm place 20 minutes.

Punch down dough.  Use immediately or cover and refrigerate at least 2 hours but no longer than 48 hours.

Roll out on a pizza stone, overlapping the sides so you will be able to form a stuffed crusted.  Make a layer of cheese and pull the dough over the top of the cheese.   At this point I put the crust into the oven for about 5 minutes to set the crust.  Then put on your favorite sauce (recipe above) and toppings.   Bake at 425 for 15 – 20 minutes. DS (Sweet J) loves cooking this pizza on the outdoor grill, it tastes like it was cooked in a wood oven.

15 Minute Timer ~ A Cure For The Messy Home

I have just been totally frustrated (once again) by the fact that my home doesn’t stay clean longer than five minutes…..any room, any cupboard, or any drawer.  I don’t have a system set up, and I also have bad habits such as putting my clothes in a pile by the side of my bed at night instead of hanging them up or putting them in the laundry hamper. DH is a complete neat freak and he doesn’t think that he really needs to help around the house because he doesn’t make any of the messy messes  ….his words exactly!

I’m tired of it. The clutter gets to me and I feel like it will never end.  My home is never fully in order, so I never really feel completely satisfied….so when yesterday was No Housework Holiday, I felt somewhat justified in just keeping my head above the mess by taking out the garbage!   This morning I took the recommendation of the Fly Lady (check her out) and set the timer for 15 minutes at a time.   Here is what I got accomplished this morning:

  • A Clean Sink…..I used the Fly Lady polish your sink method.  I love how it looks!
  • soak a completely full sink in bleach for 1 hour
  • after draining scrub with your favorite cleanser (I use Comet)
  • spray with window cleaner and wipe dry
  • results a sink that shines!

♫ Donuts Sing To Me ♫

I have a very dear friend who makes the best donuts ever…I am a complete failure when it comes to the delicious morsels! So when I heard about Donut Muffins, my thoughts went racing….I can bake and I love donuts so here is my attempt at this yummy Cinnamon Sugar Donut Muffin. With all the ingredients necessary, I once again made the kitchen smell heavenly.

Cinnamon Sugar Donut Muffins

  • 3/4 c sugar
  • 1 large egg
  • 1 1/2 c all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 c vegetable oil
  • 3/4 c milk
  • 1 tsp vanilla

  • 3 Tbs sugar
  • 1 tsp cinnamon


Preheat oven to 350˚F. Lightly coat a muffin tin with non-stick spray. In a large bowl, beat together the sugar and egg until light in color. In a small bowl, stir together the flour, baking powder, salt, and nutmeg. Pour dry mixture into the egg mixture and stir to combine. Add vegetable oil, milk, and vanilla, stirring until just combined.

Divide batter evenly into muffin tin, filling each cup about 2/3 full. Bake until a toothpick inserted into the center of a muffin comes clean, about 15-18 minutes. Let cool for 5 minutes, then remove muffins from tin. In a small bowl, combine sugar and cinnamon. While the muffins are still warm, roll each one in the mixture, coating all sides with the cinnamon sugar.

These muffins are incredibly simple to make and as soon as they are rolled in the cinnamon sugar, they just melt in your mouth….which makes them easy for Kendry to gum!

I couldn't eat just one. Luckily, I had help eating them, or I would've probably finished the entire dozen myself. As you can tell by the picture one had disappeared before I could snap the photo! Hmmmmm who was the culprit?

Kendry’s Stylin’ Jewelry

Kendry turned 10 month at the beginning of April and he hasn’t cut his first tooth.  A few weeks ago, I learned from another mom about Baltic Amber Teething necklaces. So Grandma quickly jumped on Amazon.com and found just the one we were looking for. I’ve been putting a Baltic amber teething necklace on him in an attempt to help him through any discomfort he might have from teething…..which we have thought was happening since he was 4 months old.  P1080445

I remember when I first heard of these necklaces, and decided I wanted to look into buying one… I thought they were for chewing on. Geeze girl! It’s a necklace that is worn. The warmth from the baby’s skin causes the necklace to release small amounts of a healing oil, which are then absorbed into the baby’s skin, helping with inflammation and teething.

Baltic amber teething necklaces have high concentrations of sussinic acid in them and they’ve been used for hundreds of years (more details here). They can be worn by babies between ages 3 months to 2 years. Other reputed benefits are that they are soothing and calming for fussy babies, accelerate healing from the teething process, and have immune boosting properties.

Makes me want to get one for myself! Kendry wears his Baltic amber teething necklace all day and boy doesn’t he look super stylin’. But, when he sleeps at night, I take it off for safety purposes. I sometimes let him wear it during her naps, but that’s because someone is usually next to him while he sleeps to keep a close eye on him.

Does it work? All I can say so far, even though I’m not sure he is officially teething, is that it seems to be working! He hasn’t really fussed or acted as if he is experiencing pain or discomfort from teething. Of course, there are still no teeth showing….but there are little white bumps on his bottom gums.  Now, does that mean it’s the necklace? I don’t know. Could be….who knows, the teeth just don’t want to come through, but it is really kind of cool if it is. (Grandma bought Kendry’s necklace through Amazon here.)

and snowed and I am so sick of this weather Come On Snow in April......It is totally playing with my emotions. And my grandson had a soccer game 40 degrees of burrrrrr~ Lucky for him he scored the winning goal! GO BREVIN!

Two Island Chicken

Today is a yummy day! I get to talk about Puerto Rican cuisine. Although Puerto Rican cooking is somewhat similar to both Spanish, Cuban and Mexican cuisine, it is a unique tasty blend of Spanish, African, Taíno, and American influences. This recipe is a blend of Puerto Rican and Dominican cuisine, that Ali has put together. I can tell you it is deliciously fabulous!

The mingling of flavors and ingredients passed from generation to generation among the different ethnic groups that settled on the island, resulting in the exotic blend of today's Puerto Rican and Dominican cuisine. Can’t you just smell the wonderful aroma coming from our kitchen? You will not be disappointed if you give this recipe a try!


Ingredients:



  • 2 1/2 lb boneless skinless chicken thighs

  • green bell pepper chopped

  • orange or red bell pepper chopped

  • large onion chopped

  • 1/2 cup water

  • 1 2.82 oz package Maggi Sofrito Seasoning Paste

  • 2 packets Sazo’n Goya

  • 1 cube Caldo de Pollo (Chicken Bouillon)

  • 1 Knorr’s Mini Cube Cilantro

Yes, some of these ingredients take some searching for…but Smith’s Food King has an amazing Spanish section and you can find all of these there ….if I haven’t bought the store out!


In a caldero or heavy kettle, heat olive oil and brown rapidly the chicken thighs stirring occasionally. Reduce heat to low, add rest ingredients: green & orange bell pepper, onion, water, Sofrito, Sazo’n, Caldo de Pollo and cilantro and sauté for 5 minutes, stirring occasionally. Bring rapidly to a boil. Reduce heat to moderate, cover and boil for 20 minutes or until chicken is done. Taste and adjust seasonings.


I serve this dish with rice, beans, and sliced avocadoes.

National No Housework Day

Today is National No Housework Day! Really! Would I kid about something this important??
I'm rather disappointed. No, I'm really crushed. I had planned to clean house all day long, because DD is on Spring Break, which means CLM (cute little man) will be in her care today.   I knew it was going to take me all day long, that I'd barely have time to eat or even have bathroom breaks, but I was prepared. Now I can't do that. Oh, dear, what am I going to do now?

No Housework Day

When : Always April 7th

No Housework Day is your chance to do anything, except housework. Better still, have someone else do the chores for a day. Housework is a daily, seemingly endless and repetitive groups of tasks. It often goes unrecognized and worst of all..... taken for granted. But, watch out! If the dishes aren't done, or there's no clean towels, somebody takes note.

There's two ways to celebrate this day:

If you normally do the housework around the house, cease and desist for this day. Instead, kick back and enjoy the day. Relax and do anything, except housework.

If you are a spouse or significant other, do the housework for your mate. It gives her (or him) a break from the housework. And, you just might get an appreciation of how much work it takes to keep up the house.


Origin of No Housework Day:

Our research did not uncover a particular person who started this day, or when it was first celebrated.

We're pretty sure it originated by someone who was a wee bit tired of doing the daily chores, and just needed a day off. Most likely, they threw up their hands and said something like "That's it! I'm taking a day off from all of this work".

Childhood Comfort – Bean and Bacon Soup

When I was very young Bean and Bacon Soup right out of the Campbell’s Soup can was my very favorite.  Today I needed some comfort so this was the perfect soup to end the day. It was cold and windy and cloudy grey outside all day long and I wanted something warm and comforting for dinner. I thought a bean soup would be tasty.  It was a hearty and delicious soup that that family loved.  I enjoyed the salty flavor of the bacon with the creamy beans and soft carrots. I served this soup with grilled ham/cheese sandwiches. Seriously this was a quick and easy recipe with very little clean up - perfect for a week night meal ~ a delicious as well!

Bean and Bacon Soup:

  • 1 lb of lean bacon
  • 3 large carrot, chopped
  • 2 stalks celery, chopped
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • Sea salt and freshly cracked pepper, to taste
  • 1 bay leaf
  • 3 15 1/2-ounce cans white beans, drained
  • 4 cups chicken broth
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped rosemary
  • 4 tablespoons butter
  • 4 tablespoons flour

In a large soup pan oven, fry the bacon until crisp. Remove and drain on paper towels. Let cool, chop, and set aside. Divide in half and save for topping to bowl of soup.

Over medium heat, add the carrot, celery and onion to the pan drippings in the pan and sauté for 7 minutes; add the garlic and sauté for an additional 60 seconds, stirring constantly. Season with sea salt and freshly cracked pepper, to taste.

Add 2 cans of beans, bay leaf and chicken broth. Bring to a boil, cover, and reduce heat to low. Let simmer for 15-20 minutes, or until the carrots and celery are soft.

Uncover and remove the bay leaf. Using a potato masher or an immersion blender, partially mash the bean mixture until it thickens slightly. Make a roué of the butter and flour, stir into the mashed mixture until very smooth. Stir in the last can of beans, parsley, rosemary, and bacon. Taste and re-season with sea salt and freshly cracked pepper, if needed.

Comfort Food ~ Cottage Pie

Dinner is served.  As with all recipes there are so many versions of Shepherd’s Pie, but unless you use lamb it isn’t a true Shepherd’s Pie.  Lamb is not easy to come by in my neighborhood grocer, so ground beef is the main ingredient in our “Cottage Pie”.   This dish is easy enough to put together and is comfort food for those cold “SPRING” days.  Sharing the recipe is more for my own safe keeping, since I know you all can put together your version of this dish. 

Mashed Potato Topping:

  • 5-6 large potatoes, peeled and cut into thirds
  • 1/4 cup of milk
  • 3 tbsp sour cream
  • 2-3 tbsp butter
  • 1/2 cup Irish extra sharp cheddar cheese, grated
  • Sea salt and fresh cracked pepper
  • Chives, chopped for garnish

Boil a large pot of water. Peel the potatoes and cut into thirds. Boil the potatoes for 10-12 minutes or until fork tender. Drain potatoes, I then use my potato ricers to mash and then place them back into the pan. Add the milk, sour cream, butter, cheddar cheese, sea salt and freshly cracked black pepper then mash with a masher or blend with a mixer…lucky me I have a potato ricer that I can’t live without~ Cover with a lid and set aside.

Meat Filling and Sauce:

  • 1 tsp olive oil
  • 1/2 sweet yellow onion, diced
  • 2 large carrots, diced
  • 2 stalks of celery, diced
  • 2 cloves of garlic, minced
  • 1 1/2 lbs of lean ground beef
  • 1-2 tsp Worcestershire sauce
  • 1 cup frozen edamane thawed
  • 1-2 tsp dried thyme
  • Sea salt and freshly cracked black pepper, to taste
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/4 cup beef broth

While the potatoes are cooking, preheat the oven to 400 degrees. Heat the olive oil in a large skillet over medium heat. Add the onion, carrots and celery then cook until tender, about 4-5 minutes. Add the lean ground beef and cook thoroughly. Add the thyme, salt, pepper and Worcestershire sauce.

Once the beef is done cooking, mix the peas into the mixture until well combined. Pour the beef filling into a large baking dish and set aside. In the same skillet over medium heat, add the 2 tablespoons of Irish butter and 2 tablespoons of flour. Mix thoroughly then slowly add the beef broth. Season with sea salt and pepper. Pour the sauce over the beef mixture and mix thoroughly. Top the beef and vegetable mixture with the mashed potatoes. Bake for 30 minutes. Let cool for a few minutes before serving. Top with chopped chives.

A few changes to the vegetables that are usually in cottage pie for my family.  DD hates PEAS so they are never added.

This is how Kendry Rolls!

Little Man Has New Toys

Kendry is so close to walking that we thought this musical activity center walker would be just the thing. Look how cute his is trying to help put it together. It has a 4 piano keys, a flip song book, a guitar with a toggle and a sax which has button to make sounds. There are 3 songs, 2 tunes plus instrument riffs, ditties, and scats for him to discover as he plays. Adding to all this fun is a tambourine dial and a bat at maraca for added fun play. In the next mode, he can take the music on the go as he walks behind it. The wheel base is wide enough and the handle makes it perfect for his first few steps. The music is activated as he pushes the walker forward....we love it!

A spoon full of sugar makes the medicine go down…..well how about Spring snow with the trees and flowers in bloom! Yes, we know that we need the water, and yes there is enough sunshine and green grass in between storms to convince us that eventually snowflakes will stop coming and the spring rains will turn into warmer days, but it is just a little to miserable watching mother nature fling snow all over Utah this time of the year!


I have never had a good attitude about snow, well let’s step back a few years…spring semesters at BYU were heaven when it snowed and the ski slopes were calling my name. I hope I’m not alone in this attitude….shoveling snow, frozen blooms, and days of 70 degrees and then 28 ….how can we be in love with that?


I think the final straw for me this week was the death of my parent’s and neighbor’s apricot blossoms. I saw them with anticipation, drooling (along with the baby) with the thought of bright orange fruit that someone would turn into lovely jam in just a couple of months for the family. Then a cold blast of winter shriveled them into brown lifeless clods hanging from the trees.


I am hopeful however, because signs of spring abound; new baby goats in the pasture as we pick up goats milk, daffodils still growing in flower beds everywhere, and bright red early tulips in bloom throughout my neighborhood. I know winter can’t last forever, and I know that spring will have her turn……….but winter your turn is over……so enough already. Just look what you did to my magnolia tree this morning! Shame Shame

Strawberry, Banana, Orange Zest Muffins

 

 

On this snowy Sunday Morning…yes my Magnolia Tree is blooming and now covered with snowflakes – I thought we needed some warm fresh muffins for breakfast.   Great idea…they were a huge hit with the fam, especially for DH who is on a strict diet and ate 3 of them himself.   P1080326

Strawberries are beautiful and huge now and bananas are always going to waste because they ripen so quickly; the last minneola needed to be used  and the juice and zest made these muffins “delizioso”!

Super easy recipe and made my family really happy on this “Winter/Suppose to be Spring” day!

Strawberry, Banana, Orange Zest Muffins:

Ingredients:

  • 2 1/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large ripe bananas, mashed
  • 2 eggs
  • 2/3 brown sugar
  • 1/2 cup butter, melted
  • 1 tbsp vanilla
  • 1 1/2 tbsp fresh orange juice (1 used one orange)
  • 1 1/2 cups of strawberries, sliced (add a bit of sugar if they are tart)
  • 1 tbsp grated orange zest, divided
  • 3 tbsp sugar

Preheat the oven to 375 degrees. Coat a muffin tin with cooking spray.

Combine the flour, baking powder, salt, and 1/2 tablespoon of orange zest together in a small bowl.

Using an electric mixer, beat together the bananas, eggs, brown sugar, melted butter, fresh orange juice, and vanilla until well blended. Stir in the dry ingredients until just combined then carefully add 1 cup of sliced strawberries and gently mix together. Scoop the batter evenly into the muffin tray. Sprinkle the remaining strawberries evenly over the tops of each muffin, making sure to push them down a bit.

Combine the sugar and remaining tablespoon of orange zest together and sprinkle on top of each muffin.

Place into the oven and bake for 25-27 minutes or until a tester inserted in the center comes out clean. Remove from oven and cool on a wire rack for a few minutes. “Goda di”

Asian Cooking ….Perfect Every Time….BY ME??

I am very intimidated by any recipe that is from the Asian cuisine.  I remember going to an Asian Grocery Store many years ago and asking the gentlemen about the art of cooking rice……His response,  “You can’t do it…come to me I cook it perfect every time!” ….in his very cute accent.

Since that day my rice cooking seems to have failed me and I never really want to try any recipe because we have so many amazing restaurants close enough that take out is always a hit!   The internet has several recipes for Kung Pao Chicken and with most of the ingredients on hand I decided to give it a try.  DH and DD love spicy…I’m not a fan so since I’m doing the cooking I temper the degree of spicy every time! 

Of course I’m serving this with white rice, and pot stickers on the side.  I think it was a big hit, quick and very easy to cook.  

Kung Pao Chicken:

  • 2 skinless, boneless chicken breast, diced into bite sized chunks
  • 1 tbsp cornstarch
  • 2 tsp sesame oil
  • 4 green onions, chopped
  • 2 large garlic cloves, minced
  • 1-2 tsp fresh ginger, grated
  • 1 tsp crushed red pepper flakes (less if you don't want it really spicy..a pinch for me …way less than a tsp)
  • 3 tbsp seasoned rice vinegar
  • 3 tbsp soy sauce
  • 1-2 tsp sugar
  • 1/2 cup roasted peanuts
  • White rice

Prepare rice. Combine chicken and cornstarch in a bowl and toss until evenly coated. Combine the vinegar, soy sauce and sugar in another bowl and set aside for later. Heat a large skillet or wok with sesame oil over medium high heat. Once the pan is smoking hot add the chicken and stir fry for 5-6 minutes or until no longer pink inside. Remove the chicken from the pan and set aside.


Add the garlic, ginger, red pepper and green onions (save some for garnishing) to the pan and stir fry for 30 seconds, stirring constantly. Add the soy sauce, vinegar and sugar mixture to the pan along with the cooked chicken and peanuts. Coat the chicken and peanuts with sauce and heat thoroughly. Serve over rice and top with remaining green onions. Enjoy.
