Here’s the deal…Tacos are 2 for $1 on Wednesday from the street vendors. It has become a ritual (really quirky routine) for awhile now! Tonight I added a salad and a side dish of Fideo How have I never heard of this dish before? It was so easy to make and delicious as well. (Got the recipe from one of my daughters friends!) Sharing the recipe I used so that I can make sure it is on the menu again and I will never be without all the ingredients to make this spur of the moment dish!

Ingredients:
4 Tablespoons butter
1 small onion (minced fine)
8 ounces vermicelli pasta (Fideo)
4 cups chicken stock
2 cubes tomato-flavored bouillon
Directions:
1. Heat the butter in a large sauce pan until melted. Cook and stir the onion in the butter until translucent. Stir in the vermicelli and cook until golden brown, about 3 – 5 minutes. Add the chicken stock and tomato bouillon cubes, stir to mix in well and cover. Simmer until the vermicelli is tender, 10 – 12 minutes. The liquid will be completely gone and the paste will be al dente!
