Asian Chicken Salad

We were very lucky to have Lyn and Gary with us for one of those last summer Sunday Dinners.  Ali has really improved on her cooking skills.   She knows that someday soon Kendry is going to be wanting some real food!  She put this salad together for us while Lyn and I had a chance to have a catch-up visit.   It was so yummy…..we all said this is a keeper recipe.  The thickness of the cabbage makes the salad crunchy and also helps keep the salad fresh for several days. 

This has got to be my new favorite salad. Although the flavors are not necessarily strong, there is just something about this that I love. I can’t count how many times I told Ali…wow this is really good.

It lasted for a day in my fridge before it was gone and was fresh and delicious.  I even think it would have been ok a day or so more…….but, of course, I ate it all! At first the noodles are crunchy but after sitting for a day they become soft and the salad tastes great either way. I strongly recommend trying this salad sometime soon so here goes with the recipe:

INGREDIENTS:

3 packages ramen noodles, crushed

1 cup blanched sliced almonds

2 teaspoons sesame seeds

1/2 cup butter, melted

1 head napa cabbage, shredded

1 bunch green onions, chopped

3/4 cup vegetable oil

1/4 cup rice vinegar

1/2 cup sugar

2 tablespoons soy sauce

1 lb chicken tenders

1 teaspoon season all season salt

1 teaspoon garlic powder

*1 season packet from ramen noodles

DIRECTIONS:

1.  In a frying pan cook chicken tenders in oil with, season all season salt, garlic powder, and seasoning packet from ramen noodles.   Cut into bite size pieces.

2. In a medium skillet over low heat brown ramen noodles, almonds, and sesame seeds with melted butter.   Once browned, take off heat and cool. Next time we are going to try to put them on a cookie sheet and broil them on low for a few minutes to see how that works.

3. In a small saucepan bring vegetable oil, sugar, and vinegar to boil for 1 minute.  Cool.   Add soy sauce.

4. In a large bowl, combine shredded napa cabbage and chopped green onions.   Add the cooled chicken, noodles, and soy sauce mixture.   Toss to coat.   Serve

A Day Out


A day of firsts.....This is my first day date with my grandson and in the 2 1/2 months since my he was been born, I have learned more than a few things:

#1. This one I have always known but I'll remind all of my friends who said "I told you!"...."Women in their 60s don't have babies!" Seriously. While I totally love the time he is with me, I am thankful that he also has a full time Mom to take care of him.


#2. It is impossible to give him just one kiss. You know that song..."Just One Kiss"....well it always turns into mwa. mwa. mwa. mwa! And never fewer than six, and then another six, and then another six!

#3. Being a grandparent is way more fun than being a parent. Of course, I knew this almost 9 years ago...but time gets away and I seem to have forgotten what a new life brings to those around you.


#4. Which brings us to ...YES, I am one of those grandparents. You know the kind…the ones who have a ton of pictures and stories about their wonderful grandchild and make funny faces and sounds to entertain their precious gift from Our Heavenly Father. And you have seen all those cute pictures right???

#5. I have spend more time praying and thanking my Heavenly Father than ever before!

#6. Wow has this little guy made a different in my love for life and family!

Sentimental Sunday

From the very moment my first one was born, each day is a blessings with my children and grandchildren. Thank you for being all that I could ever hope for.

From the beginning I wanted my children to do more than play video games all day. I wanted them to grow up loved and knowing how to love others. I wanted them to use their time wisely, notice the needs of others, and to find joy in knowing that a Heavenly Father blessed me with them. I wanted them to grow up embracing the knowledge that their lives are of great value, that they were definitely sent to this earth for a purpose.

And at the end of each day I hope that each of them can hear my voice say "I love you and always will"

Today Halie is 9

Happy Birthday Halie....you are an amazing little girl and I love you to pieces! You are such a good helper with your new cousin. Someday you will be teaching him how to do all kind of wonderful things like play soccer, basketball, and maybe even how to ride a bike! Thanks for being so kind, loving, and just a sweetheart!

I can't wait to see you soon and spend some time with you. Tia and I picked out something that we think you will really like for your birthday!

2 Months Batting Stats:

Weight 12 lb 6.5 ounces 68%

Height 22.5 inches 38 %

All is well....except Little Man likes to turn his head to the right! He will be doing exercises 3 times a day to see if we can force him to hold his head straighter. It doesn't help that everyone in the family is right handed and we carry him, feed him, and put him to sleep on his right side.
The doctor was very surprised that he can roll over from his stomach to his back. SO he did a little demonstration for him....yep sure enough he can roll!

He took his shots like a little trooper.....only cried for a minute and fell asleep. He's still wearing the Band-Aids to show his battle Boo-boos! What a precious little treasure he is.

Kendry is 2 months old today!

Dear Little Man,

Happy two month old birthday little man! You have grown and changed in the past two months of life already and I’m in total amazement of you. You make me smile and the love I have for you keeps growing and growing....I love you so much!

You’ve smiled at me so many times and you are really trying to talk...you coo and giggle which is the most wonderful feeling in the world. I feel like I’m getting huge rewards for feeding you, changing your diapers, doing a load of laundry every day, washing the bottles, packing the diaper bag, and I just love every minute of it! You are my world!

Last Friday was a big day for you….you found your thumb! You love to put it into your mouth and chew and suck on it whenever you think you are hungry.

You absolutely love your bath time. It is so fun to watch you as you enter the nice warm water, you coo and smile all the time you are in there. Your bathtub has been the kitchen sink and we are so glad that you fit in it just right. The Daphne bath seat is absolutely wonderful.

You have been sooooo good about shopping with grandma, Auntie Lyn, and me! What’s a guy to do when they pack you up and you are trapped!

Aunt Julie, Halie, and Brevin came for a visit this month and put your nursery all together. You have enjoyed the few times that you have been in your crib and watched the mobile sing and turn round n’ round. You room looks so nice…I sure hope you like sports when you get big!

Your favorite books for me to read to you have been the nursery rhymes books. They seem to really holds your attention (for a few seconds) and they make you smile really big! Some of my favorite songs to sing to you are ABC, Twinkle Twinkle, and Head Shoulder’s Knees and Toes. You also love it when I count 1 2 3 –uno, dos, tres! Grandma tells you she loves you about 100 times a day! She said you understand and sometimes answer her back....I don't know Grandma???

You’ve also established a bedtime routine, which is super fantastic! Your sleeping is getting better and better, even though you aren’t sleeping through the night just yet. You’ve been going to bed between 9 - 10pm, waking up between 2 - 3am, and then between 6-7am. You are giving me and grandma some sleep & we appreciate that a lot!!

I’ll end this note to you now, but just know that my world is a much better place since you are in it. You bring me so much joy and I wouldn’t trade a single second of having you in my life. Thanks for being such a sweet baby and I will continue to do my very best as your mommy.
